Pumpkin Seeds: Sweet, Spicy or Simple

This week many of us will be carving jack-o-lanterns! While the slimy chore of cleaning out the pumpkin can be a reason to skip this tradition all together, Suzy thinks of it as being one step closer to enjoying a great Halloween treat...pumpkin seeds!
Some like them Sweet while others like them Savory, Mr. Suzy likes them extra Spicy!
Go ahead, try them all and let Suzy know which you prefer!
Sweet Roasted Pumpkin Seeds:
*2 cups raw pumpkin seeds
*1 tbsp. egg white
*1/4 tsp. salt
*1/8 tsp. cayenne pepper
*1/2 tsp. cinnamon
*1/2 tsp. nutmeg
*1/2 tsp. pumpkin pie spice
....if you like, add a dash of vanilla extract
Combine your ingredients in a mixing bowl and toss in your pumpkin seeds. Spread on a baking sheet and bake at 325 for about 14-15 minutes or until toasted.

Spicy Pumpkin Seeds
* 2 cups raw pumpkin seeds
* 1/4 cup butter, melted
* 1/2 tsp. Tabasco sauce
* 1 tsp. cayenne pepper
* 1/2 tsp. cumin
* 1 Tbsp. chili powder (or more IF YOU DARE!)
Place pumpkin seeds on ungreased cookie sheet. Mix together butter and Tabasco sauce and drizzle over the seeds. Combine spices and sprinkle over the coated seeds. Toss well to coat. Bake at 300 degrees 35-45 minutes until golden brown and crisp, stirring seeds once halfway through baking. Store in airtight container.

Salty & Crunchy Seeds Sometimes the BEST recipes are the Easiest!
- Gut the pumpkin the night before and wash all the pulp off the seeds. Lay the seeds out on a cookie sheet to dry out overnight
- When ready to make the seeds preheat the oven to 350 degrees.
- In a bowl, toss the pumpkin seeds with some olive oil and seasoned salt. If you don't have seasoned salt, use regular salt and a bit of garlic or onion powder. Just add the spices until all the seeds have a bit of salt on them. Make sure there's not too much oil, but just enough for the salt to stick to the seeds.
- Spread the seeds on a cookie sheet and bake for 20 min to a half an hour, or until a golden brown color.
- Let cool and enjoy!!
