It's apple picking season!
Suzy and her gal-pals will be sharing some recipes that include Apples! Here is one of Suzy's favorite variations on the traditional coleslaw. Just by using apples and raisins, it has a sweet flavor. Enjoy!
Apple raisin coleslaw
Serving Size: 4
Ingredients:
* 1 Bag of cabbage mix
* 3 apples, peeled, cored and cut into bite sized pieces
* 1/4 cup raisins (Suzy likes to add Craisins too!)
* lemon juice
For the dressing:
* 1/4 cup Pear & Honey Vinaigrette or Honey Vinaigrette (or any sweet vinaigrette you like!)
* 1/2 tsp. cinnamon
* salt

Apple raisin coleslaw
Serving Size: 4
Ingredients:
* 1 Bag of cabbage mix
* 3 apples, peeled, cored and cut into bite sized pieces
* 1/4 cup raisins (Suzy likes to add Craisins too!)
* lemon juice
For the dressing:
* 1/4 cup Pear & Honey Vinaigrette or Honey Vinaigrette (or any sweet vinaigrette you like!)
* 1/2 tsp. cinnamon
* salt
Directions:
- Cut the apple in quarters, remove the seeds and peel the outside
- Splash a bit of lemon juice on the apples to keep them from turning brown.
- Place the raisins in a bit of water to soften them while you make the dressing.
- Combine the dressing with the cinnamon and a pinch of salt.
- To assemble, add the apples to the cabbage and mix well.
- Drain the water from the raisins and add to the cabbage mixture.
- Pour the dressing over and mix well.
If you can refrigerate the Cole Slaw overnight before eating, it will be super crunchy and sweet!!
