Recipe of the Week
Amazing Appetizers
Wednesday, April 11, 2007
We received two great appetizer recipes this week so we thought we'd share them both. Have a can't-miss recipe? Tell Suzy.
Our friend Christine's husband whipped up these delicious Pinwheels as an appetizer for the adults. They are an easy, pop in the mouth appetizer, perfect for a party (a little kick of flavor but even wimps will love them!).
Place the following ingredients in food processor and mix until smooth:
8 oz.cream cheese
8 oz. sour cream
3 jalapeno peppers chopped finely
5 green onion tops
2 tbsp. black olives(chopped)
1/2 c. cheese
Then using 12 flour tortillas, spread mixture evenly
Wrap tightly in plastic wrap or damp paper towels
Chill for 2 hours
Cut into pinwheels
They can be served with a dollop of salsa or with salsa on the side.
A real in-the-know galpal Ally says this Marinated Shrimp is simply amazing.
2 pounds cooked shrimp
1 1/4 cup vegetable oil (she used olive oil)
3/4 cup white vinegar
3 tbsp capers with liquid
2 1/2 tsp dried celery seed
1 1/2 tsp salt
2 to 3 dashes tabasco
2 cups sliced sweet onions
7-8 bay leaves
Layer onions, shrimp, and more onions in bowl.
Cover with marinade.
Combine remaining ingredients.
Marinate overnight or up to 24 hours, turning occasionally.
