"Green" Foods

To continure Suzy's quest for all things Green this month, this weeks tip from Celebrate Green is all about food and getting your kids to eat it! When they are part of the process, convincing is much easier. So check out these ideas for gardening with food.....
When selecting seeds or starters for your family garden, consider varieties that will produce an array of color.
When ready for harvest, plan meals or dishes around creating "rainbows" of color, or favorite or seasonal or color combos, for example, red and green, green and blue, etc. Invite your kids to turn their plate into a "palate" with shades of "paint" dyed by Mother Nature herself.
Before planting, gather the family and make a list of colors and all of the foods you can think of in that tint.
Examples of colorful garden foods include:
Red: Tomatoes
Orange: Bell peppers
Yellow: Squash
Green: Herbs
Blue: Blueberries
Purple: Eggplant
