Recipe of The Week - Salsa Baked Goat Cheese

Suzy's go to chef friend Lindsey brought this delicious appetizer to a get together last week. A home run, and perfect for summer gatherings.
Salsa Baked Goat Cheese
1/2 C pine nuts
(2) 4 ounce logs plain fresh goat cheese
6 ounce package cream cheese
1 C salsa
1 Tblsp. chopped fresh cilantro
Preheat oven to 350
Spread the nuts on a baking sheet and toast them in the oven until lightly browned and very fragrant, 7 - 8 minutes. Transfer to medium bowl.
Add the cheeses to the bowl and combine thoroughly with the nuts. Scoop the cheese mixture into the center of a 9 inch pie plate or baking dish. Spoon the salsa over and around the cheese.
Bake until heated through, 10 - 15 minutes. Sprinkle with cilantro and serve as a dip or a spread with pita chips or crackers.
