Be the chef you always wanted to be.  Fairfield Continuing Ed is enrolling now for these fabulous foodie courses at favorite dining spots in our area:

BBQ PASSION-THE BASICS OF BARBEQUE COOKING
Join owner Bob LeRose and his Pitmaster Matt at Bobby Q's Restaurant, 42 Main Street, Westport for an exciting evening learning all about authentic barbeque cooking while sampling some of their mouth watering house specialties. You will learn valuable tips on smoking and slow cooking beef brisket, pulled pork and of course ribs! Demonstrations will also include a variety of rub and sauce preparations to complete the BBQ journey. Space is limited so please register quickly for this one.
When: Tuesday, 7:00 PM - 9:00 PM; 1 session on January 27, 2009 (waitlisted), 1 session on February 3rd

LEARN AND DINE AT SARABANDE
Join Sarabande chef and owner, Phillis Bodek for a fun-filled evening in her restaurant where you will learn basic knowledge of cooking skills, foods and ingredients. French, Mediterranean and Asian Fusion terms and techniques will also be incorporated as they are known as Contemporary American Cuisine. You will watch and enjoy a wonderful sampling of Appetizers, Salad & Entrée and take home recipes to re-create at home. Phillis is known for fusing a wonderful array of international flavors in her popular casually elegant bistro. You'll leave with recipes ready to impress your family and friends!

PREPARE APPETIZERS LIKE A PROFESSIONAL CATERER

ABOUT SALMON WITH BLUE LEMON RESTAURANT
You will learn how to filet an entire salmon in this informative fun evening.  Then you will help Chef Bryan Malcarney prepare the salmon three different ways... seared, poached and tartare.

Learn how to prepare a new simple "family friendly" chicken dinner recipe as well as two decadent desserts to add to your repertoire in this fun evening.  Bryan will share his signature lemon tart and chocolate mousse.
