Suzy's Favorite July 4th Recipes

Get your party pants on and your "kiss the cook" apron ready! Well you might not need the apron with these simple July 4th recipes but who doesn't love a good smooch while flipping a burger?
Since July 4th activities will undeniably include a BBQ and a need for some sweet treats, here are some favorites from the SuzySaid staff that promise to be a hit!
Red White and Blue Strawberries
Ingredients
Strawberries, washed and dried
White chocolate
Blue sugar, edible glitter or sprinkles

Directions
Place blue sugar in a bowl. In a separate bowl, melt the chocolate in the microwave on 50% power for two minutes. Stir until the bowl is no longer warm. Then microwave for 30 second intervals at 50% power, stirring after each, until the chocolate is completely melted. Dip the lower two thirds of the strawberries in the melted white chocolate. Then, dip the lower third of the strawberries in the blue sugar or spoon it onto the strawberry. Place on wax paper until completely cool.
Crunchy Noodle Salad
In a pan, brown:
6 T butter
2 pkg. crushed Ramen noodles (don’t add flavor packet)
¼ cup of each:
Sliced almonds
Sesame seeds
Sunflower seeds
Cool.
Finely shred:
½-1 whole head savoy cabbage (can use some red cabbage for color)
Make Dressing:
¼ c. sesame oil
¼ c. veg. oil
¼ c. superfine sugar
1 T soy sauce
3 T rice wine vinegar
Mix together. Makes appx. 8 cups.
Salty Dog
Ingredients
2 ounces vodka
3 ounces grapefruit juice
ice
salt, for rimming the glass
lemon or lime wedge, for rimming
Directions:
Use a lemon or lime wedge to wipe around the mouth of a Collins glass. Dip the glass in salt to lightly rim. Fill the glass with ice.
Add the vodka and grapefruit juice and stir well. Makes one drink.
Summer Corn Salad
One of the easiest I have ever made, and so yummy!
Ingredients:
4 medium corn on the cob, fresh, husks and silks removed, or 1 (10-ounce package) frozen whole-corn, thawed
1 Large fresh tomato, seeded and diced
1 medium green pepper, peeled, seeded, and diced
4 medium uncooked scallions, thinly sliced
3 Tbsp cilantro, fresh, chopped
3 Tbsp seasoned rice wine vinegar
1/2 tsp salt
1/4 tsp freshly ground black pepper
Directions:
Cut the kernels from the corn cobs and place in a large bowl. Add the tomato, cucumber, bell pepper, scallions, radishes, cilantro, vinegar, salt, and pepper; gently toss to coat.
Cover and refrigerate at least 1 hour before serving. Yields generous 1 cup per serving.
Tip:
To remove the kernels from fresh corn, cut the husked ear crosswise in half so that the ear has a flat surface to stand on while you work.
Then, using a sharp knife, cut down along the outside. One ear of corn will yield about 1/2 cup kernels.
(If you're in a rush you can use one bag of Trader Joe's frozen sweet corn.)
